1 Introduction
Synthetic pigments are chemical synthetic dyes. Excessive consumption will cause damage to consumers' liver, and serious ones will have carcinogenic effects. GB2760-2014 "Food Additive Use Standards" stipulate that pigment allure red can be added to meat products, Western-style ham (smoked, smoked, cooked ham) 0.025g/kg, meat enema 0.015g/kg, edible animal casings 0.05g/kg, and other products cannot add any synthetic pigments. Synthetic pigments Carmine, sunset yellow, lemon yellow, etc. cannot be used for jerky, preserved meat products, etc.
2 Detection Principle
After the pigment in meat products is extracted, the visual colorimetric analysis method is used to read the pigment content through the colorimetric card.

6 Sample determination
(1) The sample to be tested is shredded or minced, and 1 gram is weighed in a 10 ml centrifuge tube with a balance;
(2) Add purified water to 4 ml scale, add 4 drops of reagent A dropwise, and heat it at 90 ° C in a water bath for 10 minutes;
(3) After shaking well and cooling, take 1 ml of the upper liquid in a colorimetric tube, add 3 drops of reagent B dropwise, and mix well;
(4) Continue to add 3 drops of reagent C. Mix well, let stand and stratify, and observe the results.
Results Judgment: If the supernatant is colorless or shows a very light yellow color, it means that no synthetic pigment is detected in the meat sample;
If the supernatant has obvious yellow and red color, it means that the meat sample detects artificial pigment. Compared with the colorimeter, the approximate content of red pigment is obtained.
7 Precautions
(1) The added artificial pigment may include allure red, carmine, amaranth, sunset yellow, lemon yellow, etc.
(2) For the detected red pigment, it can only be judged whether it exceeds the standard, but it cannot be distinguished whether it is allowed to add tempting red pigment or not allowed to add carmine pigment.
(3) This product is only used for primary screening, and the final result is subject to the relevant national standard methods.
8 Storage conditions and valid period
Reagents are stored in a cool and dry place at 4-30 ° C, and the valid period is 12 months.
