Instructions for Instruction of Potassium Bromate Quick Test Kit in Flour Products
Product Number: SCHM-48
1 Introduction
Potassium bromate can increase the strength and elasticity of gluten, improve the baking effect and taste of flour, so it is often used as an additive for flour treatment and flour products. However, potassium bromate is highly toxic, can cause central nervous system paralysis, and make hemoglobin produce oxidized hemoglobin. After ingesting potassium bromate, it can cause vomiting, diarrhea and kidney damage, and potassium bromate is a genotoxic carcinogen, and many countries have banned the use of potassium bromate. According to the risk evaluation results of potassium bromate, GB2760 "Hygienic Standard for the Use of Food Additives" cancelled the use of potassium bromate as a flour treatment agent in wheat flour. The "List of Non-edible Substances That May Be Illegally Added to Food" issued by the National Health and Family Planning Commission contains bromate.
2 Detection Principle
Under acidic conditions, potassium bromate can react with reagents. When there is enough potassium bromate, the color of the reaction product is yellow, and when there are enough reagents, the color of the reaction product is yellow-brown. When there is no potassium bromate, the solution does not show color.
3 Detection Scope
Wheat flour, flour or bread, cake, potato chips and other flour products.
4 Technical Indicators
Lower limit of detection: 0.01%
5 Sample Determination
5.1 Cut or grind a small piece of sample to be tested, weigh 1 gram in the sample cup, add purified water to 10 ml of scale line, shake for 3 minutes, and leave for 10 minutes as the liquid to be tested.
5 Take 1 ml of the solution to be tested in a colorimetric tube, add 2 drops of reagent A, 2 drops of reagent B, cover the tube cover, and mix well. Observe the color change after 3 minutes. If the solution has no color change, it means that there is no potassium bromate. If it is yellow brown, it means that there is potassium bromate in the sample.
6 Precautions
6 Reagent B is a strong acid. Avoid contact with the skin and mucosa when using. If it strays into the eye, please rinse it with plenty of water immediately.
6.2 Purified water or distilled water is recommended for testing water and dilution water.
6.3 This product is only used for initial screening. The final result is subject to the relevant national standard methods.
7 Storage conditions and valid period
Reagents are stored in a cool and dry place at 4-30 ° C away from light. The valid period is 12 months.
