1 introduction
Sorbic acid/potassium sorbate as a commonly used preservative, is widely used in various beverages, dairy products, condiments, cakes, jams, preserves and other foods, as long as it does not exceed the national standard limit requirements is very safe; if the excess is serious, and long-term use, to a certain extent will inhibit bone growth, endangering the health of the kidney and liver.
2 Limited standard
GB2760-2014 "Food Additive Use Standard" stipulates the amount of sorbic acid used: cooked meat products, precast aquatic products 0.075g/kg; wine 0.2g/kg; formulated wine 0.4g/kg; popsicles, processed edible fungi, candied fruits, jam products, beverages, jelly 0.5g/kg; fruit wine 0.6g/kg; jam, bread and cakes, aquatic products, syrup, vinegar, soy sauce 1.0g/kg; instant noodle products, miscellaneous grain products, egg products 1.5g/kg; concentrated fruit and vegetable juice (pulp) 2.0g/kg.
3 Detection principle
Sorbic acid and its potassium salts in food react with related detection reagents to generate colored compounds, and the color depth is proportional to the content within a certain range.

This method is suitable for the detection of beverages, dairy products, condiments, cakes, jams, preserves, etc.

6 Sample processing
Accurately weigh 1g of sample (1mL of liquid sample) in a 10mL centrifuge tube, add water to a 10mL scale line, shake for 3min and let stand, take 1mL of supernatant in a 10mL centrifuge tube, add water to 10mL, shake well. Take 0.5mL of the above treatment solution in a 5mL centrifuge tube, add 0.5mL of reagent A, shake well, take it out of the boiling water bath for 7min, add 0.5mL of reagent B immediately, shake well, place it in a boiling water bath for 10min, take it out and cool it to room temperature, observe the experimental results, and compare it with the color card.
7 Precautions
7 The experimental water is pure water or distilled water.
7.2 During the experiment, pay attention to the safe use of experimental reagents. If the reagents are accidentally splashed on the skin, they should be rinsed with water immediately.
7.3 This product is only used for initial screening. The final result is subject to the relevant national standard methods.
8 Storage conditions and valid period
